Where quality begins...
The “Trout Quality Mark Group” is the instigator of this initiative. It currently comprises companies with lengthy experience of fish farming and, most importantly, sites supplied with the highest quality spring water: Viviers de France/Aker Seafood (in Les Landes).

Supreme quality spring water, wholesome food … The production conditions for Label Rouge spring trout allow the flavour of the flesh to develop. Above and beyond the intrinsic water quality, numerous factors are taken into account by the producer to maximise the welfare of the fish and hence the flavour of its flesh.

 
Oxygen levels, the speed of water movement, cleanliness of the ponds, optimum stocking density, fish handling techniques – all are considered at every life stage right up to the point of harvest.
